Broccoli Cheddar Soup Seasoning
2 cups
milk, your choice
1 12 cups
water
2 cups
broccoli florets, fresh or frozen
12 cup
shredded cheddar cheese

Preparation
  1. In a medium pot, whisk seasoning with milk and water. Stir in broccoli. Bring to a boil over medium-high heat, stirring constantly. Lower heat and simmer 5 min, or until broccoli is tender, stirring occasionally.  
  2. Remove from heat and stir in cheese. 
  3. For a smoother soup, purée with an immersion blender, if desired. 
Tips

For a richer soup, prepare with whole milk or some cream.  

Puréeing the soup gives you more broccoli flavour. No immersion blender? Mash the broccoli once it’s softened in the soup, or cut fresh florets into smaller pieces before adding them in.  

Perfectly Balance Your Plate

Serve with 4 oz (113 g) lean protein, a dinner roll, and 1 cup steamed veggies.
